Tasty Bitter gourd Biryani

I always hated the bitter taste of the bitter gourd since my childhood but my mother was adamant on feeding me bitter gourd in the form of parantha, juice or mixed with mixed vegetables dish but I was always smart enough to pick those small pieces of green monster and threw it in the dustbin.

One day, when I came back from school I asked my mother what did she prepare for lunch. She made a sad face and told me that since she only had unriped mangoes and bitter gourds at home, she prepared a special biryani for me along with chutney made with unriped mangoes.

When I tasted the biryani it tasted heavenly!

My mother had removed the insides of the bitter gourds and shallow fried them with onions along with the shells of bitter gourds and then stuffed them inside the bitter gourds and then fried them again. After boiling rice separately she layered the bitter gourds along with boiled rice and in the end the yummy bitter gourd Biryani was ready to be eaten by me along with the tasty mango chutney!

I kissed my mother's hands as she kissed my forehead and blessed me by saying,

"May all the bitterness turns into beautiful aromatic and finger licking foods in your plate. We should learn to accept the bitterness in life if it enriches us in the long term. Just like gooseberry or Amla fruit tastes bitter when we take the first bite but after sometime it leaves a sweet taste in our mouth. Every useful thing comes with bittersweet experience which describes the nature of life itself which is the mixture of both bitter as well as sweet experiences in life!"
