Whenever you feel a little dull or upset,

I bet you, this is the best bet to lift up your mood,

By preparing a lip-smacking biryani for lunch,

Just the first bite with some juicy meat in it is enough,

To uplift and make merry your mind and soul!

 

For the ones who are new to this art of mood-setting,

I will help you out to make your life a little bit easier,

Just a few minutes of cooking and all set to be happy again,

It’s an easy and simple way to eat good food and make merry,

Eat well and take a good nap to wake up fully refreshed!

 

First of all, listen carefully and do as I say, take a heavy-bottomed vessel,

Pour in a lot of oil and some ghee, then in go a lot of spices,

Some cumin, cloves, cinnamon, star anise, mace, and bay leaves,

Next, some green chilies and a lot of onions, fry well till it turns golden,

Now turn some ginger garlic paste, and mint with coriander leaves!

 

Next, in goes our cut tomatoes, fry well till the oil separates,

Add in the big mutton pieces and fry well along with some salt,

Remember no turmeric, chili powder, or garam masala at all,

Take in equal quantities of meat and rice for a tasty biryani outcome,

Now add twice the amount of water into the meat and frying spices!

 

Bring it to a boil and add a dash of lime and taste if the salt is enough,

Cover and cook till the meat is soft and tender, well-cooked and well done,

Now the rice goes in and is washed and soaked for about ten minutes,

No extra water is required now, just cover and cook on a slow flame,

Do this for about ten minutes and put off the flame with the lid intact,

 

Open it in another ten minutes and just see how happy you would be,

Serve hot on a plate with some curd and salad to go with it, 

With a few loved ones around for company and biryani on our plates,

Eating and talking, relishing the biryani side by side,

Not dull or upset anymore, the humble biryani made it so!
